Potatoes Au Gratin
Ingredients
bullet2 tablespoons butter or margarine
bullet3 tablespoons flour
bullet2 cups milk
bullet1 teaspoon salt
bullet1/2 teaspoon pepper
bullet5 medium baking potatoes boiled, peeled and cut into 1/4 inch slices
bullet8 slices Deli Style medium cheddar cheese
bulletPaprika, optional

Melt butter in a medium saucepan over medium heat.  Stir in flour until smooth; cook 1 minute, stirring constantly.  Stir in milk, salt and pepper.  Bring to a boil, stirring frequently.  spray a 2 qt. baking dish with nonstick cooking spray.  Spoon 1/2 cup sauce into bottom of baking dish.  Place half the potatoes over sauce; top with half the remaining sauce and four slices cheese.  Repeat with remaining sauce, potatoes and cheese.  Sprinkle with paprika if desired.  Bake at 375° for 25 minutes or until bubbly.

Yield: 8 servings
