Ingredients |

 | 12 small red potatoes |
 | 2 tbsp butter or margarine |
 | 1/2 tsp salt |
 | 1/8 tsp pepper |
 | 1/2 tsp crumbled tarragon |
| Wash potatoes; pare off narrow strip of skin around middle of each with a
sharp paring knife. Place potatoes in 1 1/2 qt. baking dish; dot with
butter or margarine; sprinkle with salt, pepper, and tarragon; cover. (Fix
up to this point and bake later.) Bake at 400°
40-45 minutes or until potatoes are tender; serve with tarragon
butter sauce from baking dish spooned over. |
